Palabok Fiesta – A Holiday Special 🎄

- 250g WTH Hinimay
- 1 pack bihon noodles
- 1/2 kalabasa (boiled & pureed)
- 5 tablespoon achuete powder
- 4 tablespoon vegan shrimp powder
- 2 tablespoon vegan fish sauce
- 1 onion
- 1 garlic
- 1/4 cabbage
- 7 tablespoons cornstarch slurry
- garlic chips (for topping)
- onion chives (chopped for topping)
- calamansi (sliced in half for topping)
- salt to taste
- pepper to taste
In a frying pan over medium-high heat, heat some oil and fry your WTH Hinimay. Then set it aside for now.
In the same pan, put in the achuete powder, onion and garlic.
Once fragrant and oil is colored with the achuete, put in the kalabasa puree. Add some water.
Season with vegan shrimp powder and vegan fish sauce.
Add corn starch slurry until you get your desired consistency.
Toss in the cabbage and half of WTH Hinimay.
Season with salt and pepper to taste.
Prepare your noodles.
Cook bihon noodles in boiling water.
After straining, put cooked noodles in a plate then pour over the sauce. Top with garlic chips, onion chives and WTH Hinimay.
Serve with calamansi on the side. Enjoy! 😋🎄
